芋头土司(17中种)


其实我的芋头泥并不细腻,还有块状的芋头没有压烂。奇怪是面包出炉后,竟然看不到芋头的踪影,吃起来像是白土司。我是真的加了芋头呀!


中种(原食谱出自《天然面包香》)
高粉 70%
水 40%
酵母 2%
奶粉 2%

主面团:
高粉 30%
奶粉 4%
酵母 1%
砂糖 12%
水 14%
蛋 8%
牛油 6%
蒸熟芋头丝 35%

做法:
1、中种材料混合揉成面团后,盖上保鲜膜,放进冰箱(下方)冷藏17个小时。
2、将发酵好的中种面团撕成小块混合“主要面团”除黄油外的材料,揉成光滑面团后加入黄油揉至拉出薄膜。
3、进行第二次发酵约30分钟。
4、发酵的面团分切成6份,经两次擀卷、松驰后卷好排入吐司模里进行最后一次发酵至模具的九分满。
5、160度30分钟,出炉后立刻脱模。

What coincidence! I just baked a yam loaf too. :) yours looked very soft & nice. ;) always love the 17hr technique. I tried this recipe once but I think I over beat the dough and it turned out not as soft. :P so I tried another recipe this time.

Love to look into your blog esp.your bread,may i know what knead speed(kenwood mixer)and estimate time you took to complete the 17hrs dough to knead until stretchable and pass the window panel consistency?Tks.

hi, hope to make this 17hr bread very soon. supposing i take 300gm as he weight, does that mean the starter bread flour is 210gms and the main dough bread flour is 90gms?

janice, 谢谢你来。开始搅拌时用满速,加入牛油后我用SPEED 1。KENWOOD 说明书里写说可以用到2,可是我那架只有800W,所以不敢让它劳动太过分。15-20分钟可以出膜。

iceamericanos,你说面包刀,是在一家五金店买的。之前在烘焙店买的不够锋利,已经打进冷宫了。嘻嘻。写说是日本货。有机会放上来看看哈。
